Enjoy eating spring rolls with this healthy avocado dip
Ingredients
1 shallot or green leafy onion
2 ripe avocados
1 lime or lemon
1 tablespoon coriander / dhania
Salt and pepper to taste
1 tablespoon leafy onion for garnish
Preparation
Step One
Peel and finely chop the shallot;
Chop the coriander / dhania finely;
Slice the avocado into half. Remove the seed and scoop out the flesh;
Cut the lime or lemon into half and squeeze out the juice;
Mix the avocado, juice and coriander together. Puree until you get a smooth texture;
Stir in the shallots. Season with salt and pepper. Garnich with the chives and serve.
