About the Recipe

Enjoy eating spring rolls with this healthy avocado dip

Ingredients

1 shallot or green leafy onion

2 ripe avocados

1 lime or lemon

1 tablespoon coriander / dhania

Salt and pepper to taste

1 tablespoon leafy onion for garnish

Preparation

Step One

  1. Peel and finely chop the shallot;

  2. Chop the coriander / dhania finely;

  3. Slice the avocado into half.  Remove the seed and scoop out the flesh;

  4. Cut the lime or lemon into half and squeeze out the juice;

  5. Mix the avocado, juice and coriander together.  Puree until you get a smooth texture;

  6. Stir in the shallots.  Season with salt and pepper.  Garnich with the chives and serve.
