French Wedding Cake Recipe for the D.I.Y Bride and Groom
Croquembouche is a classic French wedding cake. It is made from a tower of profiteroles (choux pastry) filled with fresh whipped sugared cream. This French wedding cake was invented by celebrity Chef Antoine Careme (1783 - 1833). Caramelized sugar which keeps the puffs together and is drizzled on the sides of the cake, give it its name meaning "to crunch on the mouth."

Traditionally, this cake is decorated with either icing sugar, chocolate, sugared almonds or with candy ribbons. Croquembouche does not usually last very long like the rich or light fruit cake and must be eaten within the wedding day.
